This program is internationally recognised as part of the Australian Qualifications Framework (AQF). You will receive Certificate III of Hospitality (Commercial Cookery) on successful completion of the program.
Program duration 40 weeks or 4 terms covering the following subjects:
Term 1: Hygiene and Safety; Introduction to Hospitality; Training Others; People and Work; Maintenance and Stock.
Term 2: Introduction to Cooking; Food Safety; Desserts; Espresso Coffee.
Term 3: Cooking Methods; Salads; Soups and Vegetables; Organise Catering.
Term 4: Meat and Poultry; Seafood Advanced Cooking Methods; Monitor Operations.
