This program is internationally recognised as part of the Australian Qualifications Framework (AQF). You will receive Certificate IV of Hospitality (Patisserie) on successful completion of the program.
Program duration 60 weeks or 6 terms covering the following subjects:
Term 1: Hygiene and Safety; Introduction to Hospitality; Training Others; People and Work; Maintenance and Stock.
Term 2: Introduction to Cooking, Food Safety, Desserts, Espresso Coffee.
Term 3: Cooking Methods; Introduction to Patissiers; Organise Catering.
Term 4: Cakes; Desserts 2; Petit Fours; Monitor Operations.
Term 5: Work Operations; Leadership in the Workplace; Budgeting.
Term 6: Generating Sales; Advanced Safety and Security; Event Management.
COURSE REQUIREMENTS
You must complete 43 units of competency successfully to obtain this qualification. The units of competency are comprised of:
